Poor Woman's Guide To Eating Gourmet
You don't need a lot of money to prepare a quazi gourmet meal. Here's one idea -
Rolled Stuffed White Fish
Ingredients -
2 filets of inexpensive white fish (Swai, flounder, whiting)
1 Pkg. Pepperidge Farm Herb Stuffing mix
garlic powder
paprika
2 tbsp. margerine
1 pkg. white sauce mix
Directions -
Rinse fish filets under cold water. Season with salt, pepper, paprika, parsley or any other seasoning you like. Prepare stuffing mix as directed on package. Place a dollop of the prepared stuffing mix in the center of the fish filet. Roll both sides up around the stuffing and secure with toothpick. Spray shallow baking pan (glass is good) with cooking spray. Place rolled fish in center of pan, top with margerine and a sprinkle or two of garlic powder. Bake in 350 degree oven for about 20 minutes. In the meantime, prepare white sauce according to package direction. When fish is done, pour white sauce over (don't overdo it) and, voila, a gourmet item for mere dollars. Serve with rice and vegetable.
